Healthy Meal Plans: Week 42


This week’s healthy meal plan is packed with everything from a healthy Lasagna Soup made in the slow cooker to Pesto Chicken to Thai Cashew Chicken. All with nutritional info and points.

I couldn’t be more excited the weather is cooling off and soup season has started. Honestly, I wanted to include multiple soup recipes this week but decided to limit myself to just one. What do you crave when the weather cools down?

Now on to this week’s meal plan! This week kicks off with a delicious Broccoli Cheddar Egg Muffins, a Southwest Quinoa Salad, and a Slow Cooker  Lasagna Soup for dinner. Monday brings Spaghetti Arrabiata with Turkey and Tuesday is Pesto Chicken. Mid-week meals include Sheet Pan Thai Cashew Chicken and Sheet Pan Pork Chops with Potatoes and Green Beans. Finally, to end the week, there is a delicious Honey Garlic Salmon and Italian Beef Burgers.

Slow Cooker Lasagna Soup: Soup season is in full swing and I couldn’t be happier about it. This lasagna soup takes all the flavors of classic lasagna and wraps them up in a healthy soup made right in the slow cooker.
